{"id":5357,"date":"2017-03-27T08:24:33","date_gmt":"2017-03-27T07:24:33","guid":{"rendered":"https:\/\/sesc.cat\/horse-carcasses-with-yellow-fat-disease\/"},"modified":"2022-03-24T18:52:15","modified_gmt":"2022-03-24T17:52:15","slug":"horse-carcasses-with-yellow-fat-disease","status":"publish","type":"post","link":"https:\/\/sesc.cat\/en\/horse-carcasses-with-yellow-fat-disease\/","title":{"rendered":"Horse carcasses with yellow fat disease"},"content":{"rendered":"<p>In the last months \u00a04 cases of horse carcasses with an abnormal yellowish-brown coloration of adipose tissue have been submitted.<!--more--><\/p>\n<p>All cases consisted of <strong>yellow fat disease<\/strong>\u00a0 cases which is a <strong>chronic granulomatous steatitis<\/strong> (it would fall within a more general concept of Lipodystrophy, referring to an alteration of adipose tissue). We have previously described this condition in<a href=\"https:\/\/sesc.cat\/yellow-fat-disease\/?lang=en\"> cattle<\/a>.<\/p>\n<p>Briefly, this disease consists in the fact that due to a lack of reducing power lipids are oxidized and what we observe in the microscope (which is what gives the yellowish-brown color to the fat) is the accumulation of pigments resulting from the degradation of these lipids, particularly within macrophages. This oxidation of lipids causes a macrophagic inflammatory reaction (=diffuse granulomatous). These pigments are known by the name of <strong>ceroid,<\/strong> which is a type of<strong> lipofuscin<\/strong>.<\/p>\n<p>Earlier, this cases were diagnosed with the term<strong> <a href=\"https:\/\/sesc.cat\/brown-fat-horse-carcass\/?lang=en\">xanthomatosis<\/a><\/strong>, but it is a term in disuse (no longer appears in recent textbooks) and therefore we recommend to stop using it.<\/p>\n<p>Regarding public health, since it is a generalized inflammation of adipose tissue, we consider the carcasses unfit for consumption, but essentially no sanitary risk exists other than the organoleptic alteration of both color and, probably, taste (oxidized, rancid fat).<\/p>\n<div id=\"attachment_3314\" style=\"width: 593px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-3314\" class=\"size-large wp-image-7507\" src=\"https:\/\/sesc.cat\/wp-content\/uploads\/2017\/03\/SESC-080-15-1-scaled-583x600.jpg\" alt=\"Change in coloration of adipose tissue. In this case the pigment was stained intensely with the Periodic Acid Shiff (PAS) stain that labels polysaccharides.
