We have received a sample of a vertebra from a 12-month-old Friesian male calf carcass in which a generalized darkening of the color of the bone marrow and a slight yellowing of the fat of the carcass are observed. (EV)

La canal de la dreta presenta un enfosquiment generalitzat del color del moll de l'os, en comparació amb una canal normal (esquerra).

The carcass on the right shows a generalized darkening of the color of the bone marrow, compared to a normal carcass (left).

En observar la vèrtebra sota la lampada de Wood podem observar una fluorescència ataronjada, que ens dona pistes de la causa de l'enfosquiment.

When observing the vertebra under Wood's lamp (UV-light) (lower half of the image) we can observe an orange fluorescence, which gives us clues as to the cause of the darkening.

    Molt bé, interessant. La canal és apta per al consum, oi?

      Dependrà de l’abast de la lesió. La FAO recomana no aptitud total si l’acumulació de pigment és generalitzada, però si nomes afecta als ossos es poden esporgar el ossos. El motiu és l’alteració organolèptica, en si el pigment no suposa un perill.
